Apple Cinnamon Breakfast Bake

A warm baked breakfast of tart Granny Smith and sweet Fuji apples, two kinds of rolled oats, cinnamon, brown sugar, and chopped almonds or pecans.

Apple Filling

  • 2 Granny Smith apples, peeled and diced
  • 2 Fuji apples, peeled and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

 

 

Dry Ingredients

  • 100 g old-fashioned rolled oats
  • 100 g protein rolled oats
  • 50 g whole almonds or pecans, finely chopped (reserve a small handful for topping)
  • 100 g dark brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt

 

Wet Ingredients

  • 3 large eggs
  • 420 g whole milk
  • 70 g heavy cream
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 9 x 9-inch baking dish with butter or nonstick cooking spray.
  3. In a medium bowl, combine the diced Granny Smith apples, Fuji apples, brown sugar, and cinnamon.
  4. Stir until evenly coated and let the mixture rest for 30 minutes to draw out the natural juices.
  5. In a large mixing bowl, combine the old-fashioned rolled oats, protein rolled oats, chopped almonds or pecans, dark brown sugar, cinnamon, baking powder, and salt. Reserve a small amount of the nuts for topping and stir until well combined.
  6. In a separate bowl, whisk together the eggs, whole milk, heavy cream, melted butter, and vanilla extract.
  7. Fold the apple mixture, including any juices, into the dry ingredients.
  8. Pour the wet ingredients over the oat mixture and stir until everything is evenly combined.
  9. Transfer the mixture to the prepared baking dish and spread into an even layer.
  10. Sprinkle the reserved chopped nuts over the top.
  11. Bake on the middle oven rack for 40 to 45 minutes, or until the center is set and the top is lightly golden.
  12. Allow the breakfast bake to cool for 10 minutes before serving.
