“Best” Ever Potato Salad

Recipe by Lisa Marie

Creamy potato salad with tender potatoes, hard-boiled eggs, crisp celery, finely chopped onion, and a simple tangy dressing. A family favorite that’s perfect for cookouts, gatherings, or an easy side dish to make at home.

Ingredients

Units Scale
  • 2 pounds potatoes
  • 125 g celery, finely chopped
  • 10 g onion, finely chopped
  • 1 c store-bought or homemade mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • Fine sea salt, to taste
  • Black pepper, to taste
  • 4 hard-boiled eggs, roughly chopped

Instructions

  1. Scrub or peel the potatoes as desired and cut into evenly sized pieces.
  2. Cover with cold salted water and bring to a gentle boil.
  3. Cook until tender when pierced but not falling apart, about 15–20 minutes.
  4. Drain well and let the potatoes cool until no longer steaming.
  5. Stir together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.
  6. Fold in the cooled potatoes, celery, and onion. Then add in hard-boiled eggs.
  7. Taste, adjust the seasoning, cover, and chill before serving.

Notes

Keep the potato pieces evenly sized. Let them cool slightly before adding the mayonnaise dressing, then fold everything together gently so the potatoes don’t break apart.

Taste after chilling. The potatoes absorb some of the dressing as they rest, so taste before serving and adjust the salt and pepper if needed.

Storage, Freezing & Make Ahead

Potato salad is a great make-ahead side and tastes even better after it has had some time to chill. Keep it covered in the refrigerator until you’re ready to serve.

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. If the salad has been sitting out at a cookout or picnic, be mindful of how long it has been at room temperature, especially on a warm day.

I don’t recommend freezing potato salad. The potatoes and mayonnaise dressing can change in texture once frozen and thawed.
