Ingredients You’ll Need

Zucchini

Medium zucchini work best because they contain fewer seeds and less water than oversized garden zucchini. Their firm texture holds up beautifully when spiralized and lightly sautéed.

If you’re shopping, look for zucchini that feel heavy for their size with smooth, glossy skin and no soft spots.

Whole Milk Ricotta

Whole milk ricotta creates the creamy base for the sauce. Its mild flavor allows the lemon and herbs to shine while giving the dish a silky texture.

Fresh Lemon

Both the zest and juice are essential. The zest provides fragrant citrus oils while the juice adds brightness that keeps the ricotta light and fresh.

Parmesan Cheese

Freshly grated Parmesan melts smoothly into the ricotta and adds a savory, nutty depth.

Fresh Herbs

Basil and parsley give the sauce its fresh garden flavor. Whenever possible, use freshly picked herbs rather than dried.

Olive oil, Garlic, Salt, and Pepper

Olive oil carries the garlic through the warm zucchini. Fine sea salt seasons the zoodles, while kosher salt seasons the sauce.

Ingredient Philosophy

I use organic ingredients whenever possible and choose the best quality that fits the season and budget. Good sourcing matters, but it should never make a recipe feel out of reach. Use fresh, accessible ingredients and cook with confidence.

How to Make Lemon Ricotta Zoodles

Spiralize the Zucchini

Wash and trim the ends from the zucchini. Using a spiralizer, turn each zucchini into long noodle-like strands. If you’d like, lightly salt the zoodles and let them rest for 15 to 20 minutes, then gently pat them dry with paper towels to remove excess moisture. This helps keep the finished dish from becoming watery.

Make the Ricotta Sauce

Whisk together the ricotta, olive oil, lemon zest, lemon juice, Parmesan, basil, parsley, salt, and pepper until smooth.

If the mixture feels too thick, stir in a tablespoon or two of milk until it reaches a creamy consistency.

Cook the Zoodles

Heat olive oil in a large skillet over medium heat.

Add the garlic and cook just until fragrant before adding the zucchini noodles. Season lightly with salt and pepper, then cook for only two to three minutes.

The goal is tender-crisp zucchini. Overcooking will cause the noodles to release too much water and become soft.

Bring Everything Together

Remove the skillet from the heat before adding the ricotta mixture.

The residual warmth gently softens the cheese into a silky sauce that coats every strand without becoming watery.

Taste and adjust with additional lemon juice, salt, or freshly cracked pepper.

Finish and Serve

Divide the zoodles among shallow bowls and finish with freshly grated Parmesan, basil leaves, a drizzle of extra virgin olive oil, and toasted pine nuts or chopped pistachios for extra texture.

Serve immediately with slices of warm crusty bread to soak up every bit of the creamy lemon sauce.

My Weathered Table Tips

Don’t skip salting the zucchini if you have time. Letting the spiralized zucchini rest for 15 to 20 minutes before cooking helps remove excess moisture and keeps the finished dish from becoming watery.

Use whole milk ricotta for the richest texture.

Freshly grate your Parmesan whenever possible. It melts more smoothly and has far better flavor than pre-shredded cheese.

Cook the zucchini quickly over medium heat. Remember, it will continue to soften slightly after you remove it from the stove.

What to Serve with Lemon Ricotta Zoodles

This light dish pairs beautifully with warm rustic bread, grilled chicken, roasted salmon, or a crisp green salad dressed with a simple lemon vinaigrette.

For an easy summer dinner, serve it alongside grilled vegetables and finish the meal with fresh berries or homemade vanilla ice cream.

Storage

This recipe is best enjoyed immediately while the zucchini is still tender-crisp.

If you have leftovers, store them in an airtight container in the refrigerator for up to two days.

Reheat gently over low heat just until warmed through. Avoid overheating, as the zucchini will continue releasing moisture.

Frequently Asked Questions

Can I make this with regular pasta?

Absolutely. Fettuccine, linguine, or spaghetti all pair beautifully with the creamy lemon ricotta sauce.

Do I need to salt the zucchini first?

It’s optional but recommended. Salting helps draw out excess moisture, resulting in firmer zucchini noodles and a creamier finished sauce.

Can I make this ahead of time?

The ricotta sauce can be prepared up to one day in advance. Store it in the refrigerator and cook the zucchini just before serving.

Can I freeze this recipe?

Freezing isn’t recommended. Zucchini becomes very soft after thawing, and the ricotta sauce may separate.

How do I keep zucchini noodles from getting watery?

Cook them over medium heat for only a few minutes and avoid overcrowding the skillet. Salting and patting the zucchini dry beforehand also helps remove excess moisture.

Around My Table

One of my favorite things about zucchini is how effortlessly it adapts to the season. It can be baked into breads, folded into frittatas, grilled alongside dinner, or transformed into a light meal like these Lemon Ricotta Zoodles.

Recipes like this remind me that summer cooking doesn’t have to be complicated. A few fresh ingredients, good olive oil, and a handful of herbs are often all you need to create something truly memorable. Sometimes, the simplest meals are the ones that bring us back around the table.
